Description

Il Parrozzo is a traditional cake with a recipe combining almond flour and whole eggs, covered in a thin layer of Belgian dark choclate. The name is taken from an ancient peasant bread called Pane Rozzo -- a hemispherical, wood-fired bread made with corn flour. Luigi D'Amico had the idea to pay homage to this culinary heritage in confectionery form, reproducing the bread's hemispherical shape, creating a yellow dough with farm-fresh eggs, and covering the cake in a layer of fine chocolate to represent the scorched appearance from wood oven cooking. The Parrozzo's signature flavours and texture come from contrasting elements: the interior of the cake is soft and sweet, and the dark chocolate shell is crispy with slight dark cocoa bitterness. The delicate flavour of Parrozzo is enhanced by the accompaniment of sweet and fragrant wines like Moscato d'Asti or orange liqueurs such as Aurum or Amara.
