Balsamic Vinegar of Modena 12 Year Aged 100ml

Traditional Balsamic Vinegar of Modena PDO 12 Year is obtained from cooked grape must, matured by slow acetification derived from natural fermentation and progressive concentration by aging over 12 years in series of different wooden tanks, without adding aromatic substances. Dark brown and glossy, it displays its density in a smooth and silky syrup.


To produce its range of Balsamic Vinegar of Modena IGP, Bellei only uses cooked grape must, rather than concentrates, resulting in a product that retains the full aroma and flavour of the grape must. The vinegars are then matured in a series of oak barrels, with each stage concentrating the flavours and consistency. A variety of barrels are used including durmast, chestnut, ash, cherry and mulberry.

The local climate of Modena, characterized by its extreme temperature range and high humidity, is a key factor for the creation of the genuine Aceto Balsamico of Modena. It has a characteristic and complex, penetrating fragrance, with evident acidity but pleasant and harmonious. With its sweet and sour taste, traditional and inimitable, well balanced, it is generously full, savory with velvety nuances in accordance with the olfactory characteristics proper to it. Suitable for Parmiggiano Reggiano and strawberries.

Serving Suggestions:  To enjoy the aromas and flavours of Bellei 12 year old traditional balsamic, try a few drops with flakes of Parmigiano Reggiano or mature cheese, or savour on strawberries.
