Sbrisolada comes from the historical city of Mantova in Italy’s Lombardy region, just thirty kilometers from Pasticceria Perbellini in the neighbouring Veneto region. The name for this almond biscuit cake derives from the local Mantova dialect ‘Brisa’ meaning crumbs.

This classic crumbly almond and butter biscuit /cake is usually eaten at the end of a meal, after dessert, and dipped in a sweet wine such as Verduzzo di Ramandolo, or a spirit such as Grappa.
