Asiago d’Allevo is a semi-cooked, medium fat cheese, produced under the European Union PDO discipline (Protected Designation of Origin), in restricted areas of Vicenza and Trento and some parts of Padua and Treviso. D’Allevo (raised) refers to the care devoted to the maturation process of this cheese.
