In 1891 Giovanni Battista Perbellini wrote the first page of his recipe book Pasta Lievitata (Leavened Dough). The book includes a recipe for his own version of an ancient, traditional Veronese cake which he had started selling in his small bakery in the village of Bovolone near Verona. He calls his version Offella d’Oro® and it remains to this day one of the products that cements the Perbellini family’s reputation among Italy’s finest artisans. Today, the Perbellini pasticceria is owned and managed by Giovanni’s grandsons, Giovanni and Flavio, who share the same passion for maintaining the traditional methods of making Italian dolci handed down through the family. Enoteca Sileno first introduced the exquisite products of the Perbellini family to Australia in 1993.
