La Genuina is situated in Puglia on the south Adriatic coast of Italy. Since 1985, Giuseppe Curci and his wife Marion have produced traditional Pugliese pasta shapes. To maintain the highest standards, La Genuina produces pasta in small batches of only 10 kg of dough. Many of the more unusual pasta shapes are rolled by hand. Therefore, the size and thickness of each piece is irregular and unique. 

La Genuina sources the best quality durum wheat semolina with high protein and gluten content. This means that a unique blend of wheat is used to make each batch of pasta. Depending on each season’s crop, the best quality wheat is selected from a variety of sources around the world, including Puglia, Canada, United States and Australia.
