While the Southern regions of Italy offer tangy tomato sauces, olive oil and fresh seafood, the Northern regions are deeply influenced by French, Austrian and German flavours.

In this class you will explore some of the traditional foods and recipes from the Northern Italian Cuisine, where ingredients like Alpine cheeses, butter, polenta, cabbage, boiled meats are considered traditional delights.

The Northern Italian Alpine cuisine lends itself to hearty and flavoursome meals that bring comfort to the chilliest of nights.

The class concludes at the table enjoying a feast of your own creations and a glass of wine.

ABOUT MIRCO SPERI

Mirco is from Verona in Italy's lovely Veneto region, very famous for traditional dishes. Mirco attended hospitality school in nearby Bardolino and began his career doing seasonal work in various restaurants.

For the next two years, Mirco worked aboard the Princess Cruise boat and then moved to the one-Michelin starred Stefano Cavallini Restaurant in London. Mirco then continued at Neat, France, before moving to Melbourne in 2006 to take up positions at The Point followed by The European, Thirty Eight Chairs and most recently at Vinoteca.

 


Transport & Parking:

Tram routes 1 and 6. Bus routes 250, 251 and 253 travel along Rathdowne St. Get off at Richardson St and walk two blocks west towards Lygon St.

There are 2 - 3 Hour parking bays in the surrounding streets. All day meters are available on Lygon St and McPherson Street near the cemetery. Please check parking signs as restrictions may vary.

Cancellations & Refunds:

A full refund or transfer to another class will be issued if three (3) working days' notice is given. Late cancellations or no-shows are non-refundable if less than three (3) working days' notice is given. We reserve the right to cancel or alter the class date due to circumstances that have arisen beyond our control. In this event you will be advised accordingly, and a full refund will be given if the new date is not suitable to you or a transfer to another class cannot be organised.
